The secret behind our pasta? We use traditional bronze dies that give the pasta a slightly uneven, rough surface – just like in the best trattorias in Bologna or Rome. This texture allows the sauce to adhere better, giving each bite a richer and more intense flavour.

100-Layer Lasagne – A silky lasagne with veal ragù, red wine, nutmeg, mozzarella, béchamel sauce and 36-month-aged Parmesan. Love in every layer.

Salsiccia – Bronze-cut rigatoni with salsiccia, tomato sauce, ’nduja, fennel, creamy burrata and fresh basil. Rustic and full of character.
